Pulled Pork Nachos

Let the party begin! These sweet and savory pulled pork topped nachos will be the star of your next party or tailgate. The only thing better than how these nachos taste is how easy they are to make.
Ingredients:
  • 1 Package Old Neighborhood One Pot Gourmet Barbecue Pulled Pork
  • 1 TBSP Corn Starch
  • 1/4 Cup Water
  • One 13oz Bag Tortilla Chips
  • 1/4 Cup Chopped Cilantro
  • 1/4 Cup Chopped Red Onion
  • 1/2 Cup Sliced Jalapeño Peppers
  • 1/2 Cup Sliced Black Olives
  • 8 oz. Shredded Mexican Blend Cheese
  • 1/2 Cup Sour Cream
  • 1/2 Cup Fresh Salsa
  • 1/2 Cup Guacamole
  • Instructions:

    Prepare Old Neighborhood One Pot Gourmet Barbecue Pulled Pork using your preferred cooking method.

    Ten minutes before Pulled Pork is cooked preheat oven to 400˚F.

    When Pulled Pork is fully cooked remove from pot, place on dish and shred with two forks. Set aside.

    Make Sauce for Barbecue Pulled Pork:

    In a small bowl mix together 1 tablespoonful of corn starch with 1/4 cup of water. Set your pressure cooker to sauté or slow cooker to high heat and add the corn starch mixture to the juices in the pot rendered from the pork. Whisk together until well combined and sauce thickens. Return the shredded pork to pot, coat evenly and let heat through.

    Assemble Nachos:

    Place a layer of tortilla chips in an 11 x 14 glass baking dish or similarly sized oven-safe dish.  Top chips with Pulled Pork, chopped red onion, cilantro, sliced jalapeños, sliced olives and cheese. Continue layering in this manner until all items are used. Top with more barbecue sauce, place baking dish in oven and bake for 10 to 12 minutes or until cheese starts to bubble.

    Remove nachos from oven, top with salsa, sour cream and guacamole. Serve and enjoy!
