Potato and Sausage Casserole or Frittata

Ingredients:
  • 3 cups cubed or shredded Red or Bliss potatoes
  • 1 pound Old Neighborhood Sweet Italian Sausage
  • 1/4 cup milk
  • 1 (8-ounce) package cream cheese, softened
  • 1 tablespoon chopped chives, fresh or frozen
  • 2 tablespoons butter
  • 1/4 teaspoon pepper
  • 1/4 cup Scallions
  • 1 teaspoon fresh chopped sage
  • 6 Large or Jumbo Eggs
Instructions:
  1. Wash and cube or shred potatoes.
  2. Cook potatoes with 1 teaspoon salt in boiling water. Cover for 15 minutes or until tender; drain. (If using frozen cubed or shredded potatoes, thaw and pat dry with paper towel.)
  3. Set aside in 4 quart mixing bowl.
  4. Preheat oven to 375°F. Lightly grease a 9×13 inch square baking dish.
  5. Slice sausage into 1/2 inch thick pieces.
  6. Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown, and add to potatoes.
  7. Heat milk and cream cheese in a medium saucepan, stirring until cheese is melted.
  8. Add chives, salt, pepper, and scallion. Sauté for 1 minute then pour into potato and sausage mixture.
  9. Crack and beat eggs until smooth. Add sage, stir, and add to sausage mixture.
  10. Pour entire mixture into the greased baking dish.
  11. Bake 1 hour at 375°F or until a toothpick inserted into center of the casserole comes out clean.
  12. Let cool for 5 minutes before serving.
