Potato and Sausage Casserole or Frittata
Ingredients:

3 cups cubed or shredded Red or Bliss potatoes

1 pound Old Neighborhood Sweet Italian Sausage

1/4 cup milk

1 (8-ounce) package cream cheese, softened

1 tablespoon chopped chives, fresh or frozen

2 tablespoons butter

1/4 teaspoon pepper

1/4 cup Scallions
-
1 teaspoon fresh chopped sage

6 Large or Jumbo Eggs
Instructions:
- Wash and cube or shred potatoes.
- Cook potatoes with 1 teaspoon salt in boiling water. Cover for 15 minutes or until tender; drain. (If using frozen cubed or shredded potatoes, thaw and pat dry with paper towel.)
- Set aside in 4 quart mixing bowl.
- Preheat oven to 375°F. Lightly grease a 9×13 inch square baking dish.
- Slice sausage into 1/2 inch thick pieces.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown, and add to potatoes.
- Heat milk and cream cheese in a medium saucepan, stirring until cheese is melted.
- Add chives, salt, pepper, and scallion. Sauté for 1 minute then pour into potato and sausage mixture.
- Crack and beat eggs until smooth. Add sage, stir, and add to sausage mixture.
- Pour entire mixture into the greased baking dish.
- Bake 1 hour at 375°F or until a toothpick inserted into center of the casserole comes out clean.
- Let cool for 5 minutes before serving.
